Delicious Day

I love days like this, days filled with yummy food. The yummy food day started with chocolate chip muffins, my favorite breakfast! Its almost like having cake, but since its a muffin, it is considered an acceptable breakfast meal!

After church, decided to make bread. It is something I have always wanted to get good at. Maybe many of you have mastered homemade bread, but it is something that I have struggled with. I attempted rolls a couple of years ago, not sure what went wrong with them, but turned out hard as rocks. I was discouraged and didn't attempt again. Well, we have been adding to our food storage, flour, yeast, salt, sugar, etc. things to make bread. When I realized, we have the ingredients, but what is the point if you don't know what to do with them?!? So, I gave it another shot, and to my surprise, it turned out pretty good. We decided to make honey butter to put on it, and boy, was it super fantastic. I have never had honey butter before, but it is definitely something I will continue to make in the future.

For dinner, I made an oven roasted chicken, as it is one of our favorite sunday meals. We have been making it for about a year and have always just used a 9X13 pan, since it is something we will be making a lot of, I broke down and bought a proper roasting pan and rack. And it really made a difference. The skin was deliciously crispy and soft meat on the inside. With it we had stuffing and mashed potatos with gravy. Talk about fantastic-ly yummy!



And this is not the exact one we got, but it is pretty close.


Anyways, days like this aren't the norm at our house, we are like most families where both people are busy and too tired to cook, but when it does happen, it is a wonderful day! But, I am really enjoying learning to make more meals and look forward to maybe when one day, special days like today, are the norm.
